Larry,
I use a Century Graphic 2x3 with 120 rollfilm back (6x7) for
architecture and landscape work. I find the biggest drawback is the
lack of a revolving back, which means that you can't get
verticality when you're shooting vertical format. The slight degree
of shift (which is your "rise" when the camera is turned 90 degrees
from the horizontal) is not sufficient to correct the perspective.
There are a couple of ways to "fudge" this, but it will always be a
frustration, believe me! Horizontal shots are generally OK, because
you've got 3/4" rise on the front standard (that's with the 2x3
camera; don't know what it is on the 4x5). Of course, if you're
indeed talking GRAFLEX and not GRAPHIC then that's a wholly
different story!
