You have several options.
1. Yankee or FR tank. Cheap but difficult to agitate. Also takes a
lot of chemicals.
2. Hangers and open tanks. You will have to look for hangers
(Ebay?) but they are out there. Have to work in the dark and may
have agitation problems.
3. Nikor Cut film cage. Fits into standard Nikor tank in place of
reel. Had a spacer used to increase the height of a small tank to
use the cage or use a bigger tank. I have trouble keeping the film
from slipping out of the grooves and sticking to the sheet beside
it. Maybe my inversion agition was too strong.
4. Nikor 4x5 tank adjusted to 2 1/4 x 3 1/4. This is what I use.
Reel lips cut into some of the film area at edges. I've had some
agitation problems in clear areas like blank sky.
5. Jobo 4x5 system with 2 1/4 x 3 1/4 reel (jobo 2518). This is
probably the best option and most expensive (unless you have the
4x5 system now). The 4x5 reel will not work as 2 1/4 x 3 1/4 sheet
film is slightly smaller then 6x9. See

6. Just use trays.
Also note that the sheet film is smaller then 120 so if you go gl---less you may need a different carrier. I have both for my 23c.
Question I ask myself is why bother with sheets. I also can use
roll film on my Century and just got a RH-8 back. Guess it's just a
carryover as I mostly shoot 4x5, but roll film and a couple backs
makes more sense. And easy to process.
