Does anyone know if the rangefinder on a Century Graphic can be adjusted to match a 135 mm lens?

Yes. The Kalart on our Century Graphics is also used on 4X5's which use 135mm lenses. See the adjustment procedures here: http://www.graflex.org/speed-graphic/kalart-adjustment.html
