I'm interested in using a Century Graphic as a landscape field camera. I'd like to use Cokin P-series filters (e.g., neutral density gradients). Does the Century have enough clearance for a Cokin P system holder?

Well, sorta. My guess is with a normal lens you'd have to use a little rise to get it to fit and have any kind of movement of the grad filter.

that isn't a bad thing since you 'll add some rise to get rid of the parking lot/grass and add sky.

you'll have to make your own adapter from an existing P adapter and a Series VI filter holder and some epoxy or use gaffer tape.

Now if you are going to use a wide angle then you may have problems as the lens will sit too far in, it won't have room to rise, and maybe not have the coverage to rise enough

After playing around with my (new) Century Graphic, I can answer my own question. The Cokin P system will barely fit over the bed. To use a Singh-Ray ND Grad, you have to drop the bed and then raise the lens. A little tricky, but it works....
